How much sausage comes from a tonne of chicken and where do chicken bones go?

Chicken is considered the cheapest meat on the market in our region. That's why producers love it so much: the cheaper the raw meat, the lower the cost of the final product, such as sausage. Angela Gheorghița, director of the Moldovan meat processing plant Mezellini, explained how much sausage can be obtained from a tonne of chicken, how much the enterprise earns from it, and where broiler bones are used, writes Telegraf.news.

Despite chicken being the cheapest meat, sausage made from it is far from cheap. Typically, ham, baleron, and various rolls are made from chicken, rather than classic boiled sausage. This is due to the fact that, compared to boiled sausage, which often contains mechanically deboned meat, chicken rolls and ham are made from pure chicken.

It turns out that a conventional boiled pork sausage can cost more than a chicken one, and a kilogram of chicken baleron can be 2-3 times more expensive than a kilogram of a whole chicken carcass.

According to Angela Gheorghița, from a tonne of chicken, a little over half — 580 kg — remains as pure meat used for chicken sausage. Chicken breast usually does not go into sausage — it is more profitable for the enterprise to smoke it. But if all 580 kg of chicken meat are put into production, approximately 560 kg of chicken roll will be obtained.

At this stage alone, the meat processing plant almost doubles the amount spent on raw material procurement: if a tonne of chicken costs approximately 2.4 thousand dollars, then 560 kg of sausage can be sold for 4.3 thousand dollars.

But the enterprise's benefit doesn't end there. Besides pure meat, there are still bones left. Approximately a fifth of them will have to be discarded — these are the largest bones that are not suitable for processing. To prevent them from going to waste entirely, they can be donated to animal shelters.

Small bones — approximately 220 kg of backs and wings — are sent for processing. From them, about 147 kg of mechanically deboned meat is obtained, from which cheap boiled sausage is made. The profit from it, compared to sausage made from pure meat, will be less significant.

This information is provided without taking into account production costs, employee salaries, and the cost of other sausage components.
