Mushroom hunter showed seven types of chanterelles from Belarusian forests

Some are a real delicacy in Europe.

Known mushroom hunter Aliaksandr Harbatsevich showed seven types of chanterelles from Belarusian forests.

To capture this shot, he prepared for four years — he traveled and walked many places to find where these mushrooms grow.

The first type is the yellow chanterelle, common. Everyone knows them — these are the chanterelles most often collected by mushroom hunters.

The second type is the pale chanterelle. Very similar to the yellow one, but light-white in color, more massive, and rarer.

The third type is the Red Book black chanterelle. "Overall, it grows abundantly in the world: in unlimited quantities in Kuban, and in European countries, it is very loved and valued. Scientists have found 30 volatile compounds in it. And depending on how it is thermally processed, it yields different flavor elements, which is why chefs love it so much. In England, it's called the 'trumpet of death,' and in France, the 'horn of plenty'," says Harbatsevich.

The fourth is the yellowing chanterelle, very rare. They grow in swamps. If there is a lot of rain, the ground will be underwater, and the chanterelles will not sprout. But also if there is a drought, they won't either. 'There is only one place in Belarus where they grow. Add it to the Red Book immediately — this is the rarest species,' says the mushroom hunter.

The fifth type is the trumpet chanterelle. 'This is a late, northern species, the main mushroom of Finland,' notes the mushroom hunter. Unlike the yellowing chanterelle, they have yellower stems, a firm consistency, and a stronger taste.

The sixth and also very rare species is the club-shaped chanterelle. Purple-lilac in color, they can grow up to 14 centimeters in height and up to 10 centimeters in width.

And the seventh type is the false chanterelle, or orange cup. Underneath the cap, the mushroom has a reddish tint, and the top of the cap is light. These are edible mushrooms if boiled.

Aliaksandr adds that two other types of chanterelles found in Belarus did not make it into the frame. These are the grey chanterelle (it is in the Red Book, Aliaksandr has never seen this species) and the pink chanterelle.
